A Fowl Affair

Indulge in a starter so good you’ll be dreaming of winter nights by the fire at The Quill & Scholar. Guinea fowl en croûte paired with tangy cranberry chutney, soused girolles, caramelised apple and Madeira sauce. Wrapped in golden puff pastry, this winter warmer is packed with flavour and flair.

Our slow-cooked guinea fowl leg, lovingly sourced from the Lambert family in France, brings the fowl-est kind of comfort food to your table.

From the Farm

Straight from the farm and onto your fork, enjoy Jimmy Butler’s free-range pork, leek, and pepper sausage, served with bubble & squeak, grain mustard sauce, and crispy Savoy cabbage. Sourced from Jimmy’s Blythburgh farm in Suffolk, this sausage was created in celebration of Jimmy’s win as Pig Farmer of the Year by award-winning family butcher Aubrey Allen. It’s a banger in every sense of the word!

Are you ready to take your soufflé obsession to the next level? If you’re a lover of our sweet and savoury soufflé’s, this winter, it’s time to say “yes cheese!” to a new twist on a timeless classic: our Grand Soufflé main.

Whether you’re a soufflé sage or a first-timer, The Quill & Scholar soufflés – which you can now enjoy as a starter, main, and dessert – will have you floating on air!

The Grand Soufflé

Crafted with care and culinary expertise, our show-stopping main combines mushroom duxelles and award-winning oak-smoked Cheddar with a luxurious truffle cheese and chive sauce. It’s served with green beans and a mixed leaf salad to balance this cheesy masterpiece.

The star of the show? The oak-smoked Cheddar, sourced from the legendary Quickes Estate near Exeter. This cheese is no ordinary wedge – it’s clothbound and naturally matured, then smoked with oak chips harvested from trees grown on the estate itself, adding a distinctive depth of flavour that elevates the Grand Soufflé to – quite literally – extraordinary heights.

This isn’t just a dish – it’s an experience. A treat for the eyes and the tastebuds!
